The Chuck roast is a lean economical cut that is best enjoyed when braised first. This lean cut works well when roasted or slow cooking or on a smoker BBQ. Once cooked let rest 10 min., then slice thin and against the grain to enjoy max tenderness.
The Chuck roast comes from the shoulder, which is a very muscular area. Cuts from this region tend to be leaner and less tender because they are used primarily for movement.
